Made James Beard's buttermilk bread. (See page 42 of Beard on Bread). I substituted one cup of whole wheat dhurum flour (dhurum atta) for one cup of all-purpose flour. Lovely bread with a great crust

Baked Beard's Oatmeal bread with cooked oatmeal. I used steel-cut oats, so I added a bit of extra water and extended the cooking time for the oatmeal. Once again, I used one cup of atta flour in place of all-purpose. It adds a bit of flavour and fibre. This is page 107 of Beard on Bread.
